Jollof Rice
Ingredients:
Cooking oil
- Tomatoes
- Onions
- Garlic (optional)
- Hot Chilli Pepper (optional)
- Black & white pepper to season
- Curry powder
- Salt
- Nutmeg
- Rice
Method:
- Heat cooking oil in pan
- Chop tomatoes, onions, garlic and pepper and add to pan
- Fry for 20 minutes
- Add black and white pepper, curry powder, salt and nutmeg
- Boil for 10 minutes
- Add rice and leave to boil for a further 40 minutes, stirring constantly till rice is soft and cooked
Kelewele (spiced fried plantain) (pronounced ke-lay-way-lay)
Ingredients:
- Plantain (ripe)
- Ginger (ground)
- Salt
- Hot Chilli Pepper
- Peppercorns (optional)
- Cooking oil
Method:
- Wash plantains, peel and cut into small chunks
- Add ginger, salt, pepper and peppercorns and mix well
- Heat oil and fry until golden brown
- Serve while still hot – alone, or with baked beans
Spiced fried Chicken
Ingredients:
- Chicken
- Chicken stock cube
- Black & White pepper
- Salt
- Flour
- Cooking oil
Method:
- Cut chicken into pieces as desired and boil, using the stock cube to flavour
- Mix black and white pepper, salt and flour
- Dip chicken in flour mixture until well coated
- Deep fry in hot oil until golden brown
